Aesop and plant-based restaurant Plates collaborated on Seasonal Metamorphosis, a delectable transformation, from ingredient to dish. A series of dinners were hosted in London by Aesop and Plates with the idea of exploring the transformative journey of ingredients. We documented their change from initial growth, through various treatments and cooking techniques, to a final work of art served on a plate.
